Description
A delicious and hearty bread pudding made with day-old bread, fresh herbs, and vegetables.

- 10 cups day-old bread cubes
- 1 cup unsalted butter
- 1 large yellow onion, chopped
- 3 celery stalks, diced
- 3 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh sage, chopped
- 1 tablespoon fresh thyme, chopped
- 2 cups chicken or vegetable broth
- 2 large eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cut the bread into 1/2-inch cubes and cook for 2 more minutes.
- In a large bowl, combine bread cubes and vegetable mixture. Whisk eggs with broth and pour over. Toss gently to combine.
- Transfer to a greased baking dish. Cover with foil and bake at 350°F for 30 minutes.
- Uncover and bake for an additional 15-20 minutes until top is golden and crisp.
Notes
- For added flavor, use a mix of chicken and vegetable broth.
- Feel free to substitute with your favorite herbs.
