Description

A delicious and hearty bread pudding made with day-old bread, fresh herbs, and vegetables.


Ingredients

  • 10 cups day-old bread cubes
  • 1 cup unsalted butter
  • 1 large yellow onion, chopped
  • 3 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cups chicken or vegetable broth
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cut the bread into 1/2-inch cubes and cook for 2 more minutes.
  2. In a large bowl, combine bread cubes and vegetable mixture. Whisk eggs with broth and pour over. Toss gently to combine.
  3. Transfer to a greased baking dish. Cover with foil and bake at 350°F for 30 minutes.
  4. Uncover and bake for an additional 15-20 minutes until top is golden and crisp.
