Description
Deliciously soft and chewy snickerdoodles coated in cinnamon sugar.
Ingredients
Scale
- 2 3/4 cups (358g) all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup (224g) unsalted butter, room temperature
- 1 1/2 cups (310g) sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3 tbsp (39g) sugar (for coating)
- 1 tbsp ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (176°C). Line your baking sheets with parchment paper to prevent sticking and make cleanup a breeze.
- In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt. The cream of tartar is the magic ingredient—it gives snickerdoodles their signature tang and chewy texture.
- In a large mixing bowl, beat the butter and sugar together on medium speed until light and fluffy, about 2-3 minutes. This step is key to that soft bite we love in snickerdoodles.
- Beat in the eggs one at a time, then mix in the vanilla extract. Your dough should be creamy and fragrant by now.
- Slowly add the dry ingredients to the wet mixture, mixing just until combined. Don’t overmix—it can make the cookies tough.
- In a small bowl, stir together the sugar and cinnamon. This coating adds a gentle crunch and warm spice to every bite.
- Scoop about 1 1/2 tablespoons of dough and roll it into a ball. Then, roll the ball in the cinnamon-sugar mixture until fully coated. Place on the prepared baking sheets, spaced about 2 inches apart.
- Bake the cookies for 10-12 minutes. They’ll puff up in the oven and then settle slightly into soft, crinkled rounds. Don’t wait for them to look fully done—snickerdoodles continue baking a bit after they’re out of the oven.
- Let the cookies sit on the baking sheet for 5-10 minutes before transferring to a wire rack to cool completely.
Notes
- Ensure the butter is at room temperature for best results.
- Do not overmix the dough to keep the snickerdoodles soft.
- These cookies taste great the next day too!
