Description

Ingredients

  • 1 medium green cabbage, sliced
  • 1 cup green or brown lentils, rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the chopped onion until translucent, about 5 minutes.
  2. Stir in minced garlic, cumin, and smoked paprika; cook for another minute until fragrant.
  3. Add sliced cabbage and rinsed lentils; mix well.
  4. Pour in vegetable broth to cover the mixture by an inch. Bring to a simmer, then reduce heat to low and cover.
  5. Cook for about 30 minutes until lentils are tender.
  6. Check for doneness; add salt and pepper as needed before serving warm.
