Ingredients

  • 4 large russet potatoes (peeled and diced)
  • 2 cups chili (canned or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt (to taste)
  • pepper (to taste)
  • 1 tablespoon olive oil
  • green onions (chopped, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the diced russet potatoes into a pot of boiling water. Cook them for about 15 minutes until tender but not mushy.
  3. Carefully drain the potatoes in a colander, letting them sit for a moment to remove excess water.
  4. In a large bowl, combine the drained potatoes, chili, garlic powder, onion powder, salt, and pepper. Stir until everything is evenly coated.
  5. Pour the potato and chili mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  6. Generously sprinkle the cheddar cheese on top.
  7. Slide the dish into the oven and bake for 25-30 minutes, until the cheese is bubbly and golden brown.
  8. Once baked, remove the dish from the oven and let it rest for a few minutes to set before serving.
