Description

A creamy chicken dish with vegetables, perfect for a comforting meal.

Ingredients

Scale
  • 1 whole chicken (or chicken breasts/thighs)
  • Salt (for boiling water)
  • 2 tablespoons butter (for sautéing vegetables)
  • 2 carrots (diced)
  • 1 cup mushrooms (sliced)
  • 1 cup frozen peas
  • 1 tablespoon butter (for roux)
  • 3 tablespoons flour
  • 2 cups chicken broth (reserved from boiling chicken)
  • 1 cup heavy cream
  • Salt (to taste)
  • Pepper (to taste)
  • Lemon juice (to taste)
  • Fresh parsley or dill (optional, for garnish)

Instructions

  1. Prepare the Chicken: Start by boiling a whole chicken (or chicken pieces) in a large pot of salted water for about 1 hour. Once cooked, remove the chicken from the pot and let it cool. Reserve the broth for later use.
  2. Shred the Chicken: Once the chicken is cool enough to handle, shred the meat into bite-sized pieces, discarding the skin and bones.
  3. Sauté the Vegetables: In a large skillet, melt 2 tablespoons of butter over medium heat. Add diced carrots and cook for about 5 minutes. Then, add sliced mushrooms and cook until softened. Finally, stir in frozen peas and cook for an additional 2 minutes.
  4. Make the Roux: In the same skillet, add another tablespoon of butter and sprinkle in 3 tablespoons of flour. Stir continuously for about 2 minutes until it forms a paste, then slowly whisk in 2 cups of the reserved chicken broth, ensuring there are no lumps.
  5. Add Cream: Once the sauce thickens, reduce the heat to low and stir in 1 cup of heavy cream to give the dish its creamy texture.
  6. Combine Ingredients: Add the shredded chicken and sautéed vegetables into the sauce. Stir everything together and let it simmer for about 10 minutes to meld the flavors.
  7. Season to Taste: Finally, season your Huehnerfrikassee with salt, pepper, and a squeeze of lemon juice to brighten the flavors. If you enjoy herbs, fresh parsley or dill makes a lovely addition.
