Description

Delicious cloud bread filled with seasoned chicken and cheese.


Ingredients

Scale
  • 1 pound boneless, skinless chicken breast
  • 3 egg whites
  • 3 egg yolks
  • 1/2 cup cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • garlic powder to taste
  • onion powder to taste
  • salt to taste
  • pepper to taste
  • optional: dried herbs (thyme or oregano)
  • optional: nutritional yeast for dairy-free option
  • optional: vegan cream cheese substitute for dairy-free option

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine 3 egg whites and beat them until stiff peaks form.
  3. In another bowl, mix together 3 egg yolks and 1/2 cup of cream cheese until smooth.
  4. Fold the egg whites into the yolk mixture gently until fully combined.
  5. Spread the mixture onto a parchment-lined baking sheet to form rounds.
  6. Bake for 15-20 minutes until golden and fluffy.
  7. While the cloud bread is baking, cut 1 pound of boneless chicken breast into bite-sized pieces.
  8. Season the chicken with garlic powder, onion powder, salt, and pepper.
  9. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  10. Once hot, add the seasoned chicken pieces and cook until they are no longer pink and have a nice golden color, about 5-7 minutes.
  11. Stir in 1/2 cup of grated Parmesan cheese, allowing it to melt into the chicken.
  12. Once the cloud bread is ready and the chicken mixture is cooked, assemble the bombs by placing a generous spoonful of the chicken mixture onto each cloud round.
  13. Use the edges of the cloud bread to fold over the filling, creating a little pouch.
  14. Return the assembled Chicken Bombs to the oven for an additional 10 minutes.
  15. Remove from the oven and let them cool slightly before serving.
  16. Sprinkle additional Parmesan cheese or fresh herbs on top for extra flavor.
