Delicious and simple recipe for sautéed asparagus tips with lemon.

- 1/2 lb. asparagus tips
- 1 T good quality olive oil
- 1 lemon, zest removed and juiced
Instructions
- Prepare the asparagus tips by cutting them from one pound of asparagus, saving the thicker stalk ends for another recipe.
- Zest the lemon, cut it in half, and remove any noticeable seeds before squeezing the juice into a small dish.
- Heat the olive oil in the largest frying pan available over medium-high heat.
- Add asparagus tips in a single layer and cook for 4-5 minutes, turning once a minute, until tender yet still crisp and starting to brown.
- Turn off heat and pour over the desired amount of lemon juice.
- Arrange asparagus tips on a plate, sprinkle with lemon zest, and serve immediately.
- If cooking the whole pound of asparagus, trim the woody ends, cut into two pieces, keeping ends and tips separate. Cook the woody ends for about 2 minutes before adding the tips, cooking for an additional 4-5 minutes as above.
Notes
- From one pound of asparagus, only the tips are used for this recipe.
- Lemon juice can be adjusted based on personal preference.
- Asparagus should have some snap when properly cooked.
