A delicious and creamy side dish featuring Brussels sprouts baked with a rich cheese sauce.

- 16 ounces Brussels sprouts, cleaned, trimmed, and cut in half
- 2 tablespoons butter
- ½ cup heavy cream
- ½ cup parmesan cheese, shredded
- 1 cup cheddar cheese, shredded
- 1 cup fontina cheese, shredded
- 3 cloves garlic, minced
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ⅛ teaspoon nutmeg
Instructions
- Position a rack in the center of your oven and preheat it to 375ºF (190ºC) to ensure it’s ready for baking.
- While the oven preheats, clean and trim the Brussels sprouts, cutting them in half. Then shred the fontina, cheddar, and parmesan cheeses and combine all the shredded cheeses in one bowl; set aside.
- Heat an ovenproof pan like a cast iron skillet or braiser over medium heat. Add the butter and minced garlic, gently melting the butter while infusing the garlic flavor without browning. The garlic should soften and start to simmer lightly.
- Once the garlic begins to simmer, remove the pan from heat. Stir in the heavy cream, kosher salt, black pepper, garlic powder, and nutmeg. Mix in half of the combined shredded cheese, allowing it to start melting into the sauce.
- Add the halved Brussels sprouts to the pan, stirring them well to coat evenly with the creamy garlic sauce. Spread the sprouts out evenly in a single layer in the pan.
- Sprinkle the remaining shredded cheese over the Brussels sprouts. Place the pan directly in the preheated oven and bake for 18 to 25 minutes, or until the cheese is melted, bubbly, and lightly golden, and the Brussels sprouts are cooked through and tender.
- Remove from the oven and serve immediately while warm, ideally alongside your favorite protein and other complimentary sides.
Notes
- For best results, use fresh Brussels sprouts rather than frozen.
- Feel free to mix different types of cheese for a unique flavor.
