A delicious and tender beef chuck roast cooked perfectly in your Instant Pot.
Ingredients

- 3 lbs beef chuck roast
- 4 medium yellow onions, sliced
- 2 cups low-sodium beef broth
- 4 garlic cloves, minced
- 4 sprigs fresh thyme
- 2 bay leaves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Set the Instant Pot to ‘Sauté’ mode. Add olive oil and sliced onions; cook until caramelized (about 10 minutes). Remove onions and set aside.
- Season the beef chuck roast with salt and pepper. Add to the pot; sear each side for about 4-5 minutes until browned.
- Stir in minced garlic, thyme, and bay leaves; cook for another minute.
- Pour in beef broth while scraping any browned bits from the pot. Return caramelized onions to the pot.
- Secure the lid and set to ‘Manual’ or ‘Pressure Cook’ for 60 minutes.
- Once cooking is complete, carefully release pressure. Serve slices of pot roast topped with sauce.

- Let the roast rest for a few minutes before slicing for better texture.
