Delicious cherry almond muffins that are perfect for breakfast or a snack!
Ingredients

- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- ⅓ cup unsalted butter (melted)
- 2 large eggs
- ½ cup milk (or almond milk)
- 1 tsp vanilla extract
- 1 cup chopped fresh cherries
- ½ cup sliced almonds
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, mix the melted butter, eggs, milk, and vanilla until smooth.
- Combine the wet and dry ingredients gently until just mixed; fold in the cherries and almonds.
- Fill the muffin cups two-thirds full with batter and sprinkle extra almonds on top.
- Bake for 20-25 minutes or until golden brown; cool slightly before transferring to a wire rack.
Notes
- Feel free to substitute almond milk for regular milk to make it dairy-free.
- These muffins can be stored in an airtight container for up to 3 days.
