Description

Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ⅓ cup unsalted butter (melted)
  • 2 large eggs
  • ½ cup milk (or almond milk)
  • 1 tsp vanilla extract
  • 1 cup chopped fresh cherries
  • ½ cup sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the melted butter, eggs, milk, and vanilla until smooth.
  4. Combine the wet and dry ingredients gently until just mixed; fold in the cherries and almonds.
  5. Fill the muffin cups two-thirds full with batter and sprinkle extra almonds on top.
  6. Bake for 20-25 minutes or until golden brown; cool slightly before transferring to a wire rack.
