Description

Delicious and healthy banana oat cookies made with simple ingredients.


Ingredients

Scale
  • 1 medium ripe banana (peeled)
  • 100 g rolled oats (check they’re gluten-free if required)
  • 2 tbsp honey
  • 3 tbsp peanut butter
  • 50 g dark chocolate (chopped, check it’s gluten-free if required)
  • 1 pinch of salt

Instructions

  1. Preheat your oven to 170C/325F (fan).
  2. Place the banana in a medium-sized bowl and mash it with a fork.
  3. Add the oats, honey, and peanut butter, and give everything a good stir until combined.
  4. Add in the chopped chocolate (reserve a few pieces to sprinkle on once the cookies are cooked) and the salt. Stir to combine.
  5. Take a tbsp of the mixture in your hand, roll into a ball, and then squash to flatten into a thick disk (approx. 1cm thick). Place on a baking tray and repeat until all your mixture is used up. You should get 6-7 cookies.
  6. Place in the oven and cook for 15 minutes.
  7. Take out of the oven, sprinkle with the reserved chocolate, and leave to cool.

Notes

  • Ensure oats and chocolate are gluten-free if necessary.
  • Store cookies in an airtight container for freshness.
