Description

This hearty ham and potato soup is perfect for a comforting meal.


Ingredients

Scale
  • 1 large carrot (chopped)
  • 2 sticks celery (chopped)
  • 1/2 medium onion (chopped)
  • 1 pound ham (cut into small pieces)
  • 2 pounds Russet potatoes (peeled & diced)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 2 cups water
  • Salt & pepper (to taste)

Instructions

  1. Prep your ingredients and add them all to your Crockpot.
  2. I cook this soup on low for 8 hours. Depending on how large your potato and carrot pieces are, you may be able to cook it for a bit less.
  3. I like to cook the potatoes until they’re very soft.
  4. Using a potato masher, lightly mash some of the potatoes right in the slow cooker.
  5. I like a mix of potato pieces and a bit of mash.
  6. Season with salt & pepper as needed and serve immediately.
