Description

Soft and chewy cookies packed with the sweetness of dates and crunch of walnuts.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped dates
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, cream together butter and brown sugar until fluffy.
  4. Add the egg and vanilla to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet, mixing until just incorporated.
  6. Fold in chopped dates and walnuts if using.
  7. Scoop dough onto baking sheet, spacing cookies apart.
  8. Bake for 10-12 minutes until edges are golden.
  9. Let cookies cool on the sheet for 5 minutes before transferring to a wire rack.
  10. Serve warm or store in an airtight container.

Notes

  • For a richer flavor, consider toasting the walnuts before adding them to the dough.
