  • 1/4 cup all-purpose flour
  • 1 teaspoon salt

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes with juice
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Fresh parsley, for garnish (optional)

Instructions

  1. Start by cutting the beef round steak into 1-inch pieces. Pat it dry with paper towels.
  2. In a shallow bowl, mix flour, salt, and black pepper. Dredge the beef pieces in the flour mixture, making sure they’re well coated.
  3. In a large pot or Dutch oven, heat olive oil over medium heat. Add the beef in batches, searing until browned on all sides. Remove the beef and set aside.
  4. In the same pot, add chopped onions and carrots. Cook for about 5 minutes or until they begin to soften. Add garlic and cook for another minute.
  5. Return the browned beef to the pot. Pour in diced tomatoes with juice and beef broth. Scrape the bottom of the pot to release any browned bits.
  6. Stir in Worcestershire sauce, thyme, and the bay leaf. Bring the mixture to a boil, then reduce heat to low.
  7. Cover the pot and let it simmer for about 1 hour or until the meat is fork-tender, stirring occasionally.
  8. Check for seasoning and adjust with additional salt or pepper as needed. Remove the bay leaf before serving.
  9. Sprinkle with fresh parsley for an appealing presentation.
