Description

Delicious air-fried acorn squash slices seasoned with olive oil and parsley.


Ingredients

Scale
  • 1 whole acorn squash (cut into slices)
  • 1 pinch salt (more when done to taste)
  • 1 tsp olive oil (or avocado oil)
  • 1 tbsp parsley (chopped)

Instructions

  1. Slice the acorn squash into disks. Remove any of the seeds.
  2. Place into air fryer without overlapping and brush olive oil on top, or use spray. Sprinkle salt and pepper on top.
  3. Air fry for 10-12 minutes at 350 F, or as long as it takes to get as fork tender as you’d like.
  4. Garnish with diced parsley.
