- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 8 ounces cream cheese, softened
- 1/3 cup powdered sugar
- 1/4 cup caramel sauce, plus extra for drizzling
- 1/2 cup caramel bits or chopped soft caramel candies
Instructions
- In a small bowl, mix the cream cheese, powdered sugar, and caramel sauce until smooth. Scoop into small portions and place them on a lined tray, then chill until firm.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, beat the butter, brown sugar, and granulated sugar until light and creamy. Mix in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms. Fold in the caramel bits if using.
- Scoop portions of dough and flatten each one slightly. Place a chilled cream cheese filling portion in the center, then wrap the dough around it and seal the edges.
- Place the filled dough balls on a tray and chill for 20 minutes.
- Bake at 350°F for 11 to 13 minutes, until the edges are lightly golden and the centers are just set.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Drizzle with extra caramel sauce once cooled.
