Description
There’s a quiet joy in preparing this recipe the night before. It feels like you’re doing your future self a small favor.
Ingredients
Scale
- 1/2 cup rolled oats
- 1/2 cup coconut milk
- 1/4 cup Greek yogurt
- 1 tablespoon chia seeds
- 1–2 tablespoons maple syrup
- 1/4 teaspoon vanilla extract
- 2 tablespoons shredded coconut
- Pinch of salt
- Whipped cream
- Toasted coconut flakes
- Fresh fruit
Instructions
- Start by grabbing your favorite jar or bowl. I like using a glass jar because you can see the layers come together, almost like a parfait.
- Add the rolled oats, chia seeds, and a pinch of salt. These simple ingredients form the heart of the dish, soaking up all the creamy goodness overnight.
- Next, pour in the coconut milk. As it blends with the oats, you’ll already catch that subtle tropical aroma. Stir in the Greek yogurt for richness and protein, followed by maple syrup and vanilla extract for sweetness and warmth.
- Now comes one of my favorite parts—adding the shredded coconut. It gives the oats that unmistakable coconut cream pie flavor and a delicate texture that makes every bite interesting.
- Stir everything well until fully combined. Cover your jar and place it in the refrigerator overnight, or for at least 4–6 hours.
- By morning, the mixture will have thickened into a creamy, pudding-like consistency. Give it a quick stir, then top with whipped cream, toasted coconut, or fresh fruit if you like.
- Take a spoonful, and you’ll see exactly why coconut cream pie overnight oats feel like such a treat.
