Ingredients

- ½ cup honey
- ¼ cup brown sugar
- 2 tbsp unsalted butter
- 1 egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ¾ cup finely ground almonds
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground cloves
- ¼ tsp ground ginger
- ¼ tsp salt
- 2 tbsp finely chopped candied orange peel (optional)
- 1 cup powdered sugar
- 2 tbsp lemon juice
Instructions
- Warm honey, brown sugar and butter until melted and smooth.
- Mix egg and vanilla, then stir in honey mixture.
- Combine dry ingredients separately.
- Mix everything into a soft dough.
- Drop onto baking sheet.
- Bake until lightly golden.
- Cool and glaze if desired.

- For a more intense flavor, let the dough rest for a few hours before baking.
