Ingredients

  • 2 cups ripe mango chunks
  • 1 cup mango puree
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin powder
  • 3 tablespoons warm water

Instructions

  1. Blend the mango chunks into a smooth puree and set aside.
  2. In a small bowl, combine gelatin powder with warm water and let it bloom for a few minutes.
  3. Heat the bloomed gelatin gently until dissolved completely, then allow it to cool slightly.
  4. In a large bowl, whip the heavy cream and powdered sugar until soft peaks form.
  5. Fold the mango puree and vanilla extract into the whipped cream mixture until smooth and fluffy.
  6. Add the dissolved gelatin and gently mix until fully combined.
  7. Spoon or pipe the mousse into serving glasses or dessert cups.
  8. Refrigerate for at least 4 hours or until set.
  9. Serve chilled with fresh mango cubes if desired.
