- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups Mini Eggs, roughly chopped
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy and lighter in color.
- Add the egg and vanilla extract, then mix until smooth and fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
- Fold in the chopped Mini Eggs and chocolate chips, saving a few Mini Egg pieces for the tops.
- Scoop the dough into rounded balls and place them 2 inches apart on the prepared baking sheets.
- Press a few reserved Mini Egg pieces on top of each dough ball.
- Bake for 9 to 11 minutes, until the edges are lightly golden and the centers still look slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- For extra flavor, consider adding a pinch of cinnamon or nutmeg.
- Store cookies in an airtight container for up to a week.
