Description

Delicious Mini Egg cookies with a soft center and crispy edges, perfect for any occasion!


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups Mini Eggs, roughly chopped
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy and lighter in color.
  3. Add the egg and vanilla extract, then mix until smooth and fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
  6. Fold in the chopped Mini Eggs and chocolate chips, saving a few Mini Egg pieces for the tops.
  7. Scoop the dough into rounded balls and place them 2 inches apart on the prepared baking sheets.
  8. Press a few reserved Mini Egg pieces on top of each dough ball.
  9. Bake for 9 to 11 minutes, until the edges are lightly golden and the centers still look slightly soft.
  10. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
