- 1 cup creamy peanut butter
- 12 ounces chocolate melting wafers or chocolate chips
- 1 tablespoon coconut oil or shortening
- 2 tablespoons holiday sprinkles
- 2 ounces white chocolate, optional
- 2 tablespoons crushed peppermint candies, optional
Instructions
- Line a baking sheet or tray with parchment paper and set it aside.
- Spread about 1 teaspoon of creamy peanut butter onto 24 Ritz crackers.
- Top with the remaining 24 crackers to make sandwich cookies and press gently.
- Add the chocolate and coconut oil to a microwave-safe bowl.
- Microwave in 20-second intervals, stirring after each one, until the chocolate is smooth and melted.
- Dip each cracker sandwich into the melted chocolate, turning to coat fully.
- Lift each cookie out with a fork, let the excess chocolate drip off, and place it on the prepared tray.
- Decorate the tops with holiday sprinkles, white chocolate drizzle, or crushed peppermint while the coating is still wet.
- Let the cookies sit at room temperature until set, or refrigerate the tray for 20 minutes to firm up faster.
- Serve once the chocolate coating is fully set.
