Description
Delicious strawberry lemon blondies that are soft, chewy, and bursting with fresh flavors.

- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 egg
- 1/4 cup fresh squeezed lemon juice
- 2 1/4 cups all purpose flour, divided
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup fresh strawberries, hulled, quartered and chopped
- 1 cup confectioners sugar
- 2 tbsp. lemon juice
Instructions
- Preheat oven to 350 degrees F. Line an 8×8 baking dish with parchment paper or grease with non-stick cooking spray.
- In a large mixing bowl, cream butter and sugar.
- Add in egg and beat until incorporated. Add lemon juice and stir.
- In a separate bowl, whisk 2 cups of the flour, baking powder, and salt until combined.
- Add the flour mixture to wet ingredients bowl and stir until completely mixed in.
- In a small mixing bowl, toss the strawberries with the remaining 1/4 cup of flour. Add to the blondie batter and fold in.
- Pour into prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until set. Do not over bake! Let cool on rack.
- In a small bowl, whisk the powdered sugar and lemon juice until smooth. Drizzle and spread over the completely cooled blondies and let set before cutting.
Notes
- For best results, use fresh strawberries.
- Make sure to let the blondies cool completely before applying the glaze.
