Description

Delicious strawberry lemon blondies that are soft, chewy, and bursting with fresh flavors.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 1/4 cup fresh squeezed lemon juice
  • 2 1/4 cups all purpose flour, divided
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup fresh strawberries, hulled, quartered and chopped
  • 1 cup confectioners sugar
  • 2 tbsp. lemon juice

Instructions

  1. Preheat oven to 350 degrees F. Line an 8×8 baking dish with parchment paper or grease with non-stick cooking spray.
  2. In a large mixing bowl, cream butter and sugar.
  3. Add in egg and beat until incorporated. Add lemon juice and stir.
  4. In a separate bowl, whisk 2 cups of the flour, baking powder, and salt until combined.
  5. Add the flour mixture to wet ingredients bowl and stir until completely mixed in.
  6. In a small mixing bowl, toss the strawberries with the remaining 1/4 cup of flour. Add to the blondie batter and fold in.
  7. Pour into prepared baking dish and spread evenly.
  8. Bake for 30-35 minutes, or until set. Do not over bake! Let cool on rack.
  9. In a small bowl, whisk the powdered sugar and lemon juice until smooth. Drizzle and spread over the completely cooled blondies and let set before cutting.

Notes

  • For best results, use fresh strawberries.
  • Make sure to let the blondies cool completely before applying the glaze.
