Description

This colorful rainbow cake is filled with delicious pudding and topped with whipped cream and sprinkles, perfect for celebrations!


Ingredients

  • 1 box 15 ounces white cake mix (plus ingredients needed to prepare the cake mix)
  • 2 teaspoons vanilla extract
  • 1 Light Blue Gel Food Coloring
  • 1 Purple Gel Food Coloring
  • 1 Pink Gel Food Coloring
  • 2 cups condensed milk
  • 2 cups white chocolate chips
  • 3 ounces package vanilla pudding mix
  • 3 ounces package strawberry pudding mix
  • 4 cups milk
  • 8 ounces container whipped topping
  • 1/3 cup sprinkles

Instructions

  1. Preheat oven to 350°F.
  2. Grease a 9×13 baking dish with baking spray and set aside.
  3. Prepare cake mix as directed on the package, adding vanilla extract.
  4. Divide the batter evenly into three bowls. Stir blue food color into one bowl. Stir purple food color into the second bowl. Stir pink food color into the third bowl.
  5. Alternating colors, drop heaping spoonfuls of batter randomly into the prepared baking dish.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool for 10 minutes. Poke large holes all over the cake using the end of a wooden spoon.
  8. Add condensed milk and white chocolate to a medium bowl. Microwave for 1 minute, then stir to combine until melted. If necessary, microwave for an additional 30 seconds.
  9. Pour the mixture evenly over the poked cake.
  10. Prepare the pudding mixtures according to the package directions, usually by mixing each one with 2 cups of milk. Stir until the mixture starts to thicken, and then immediately pour the vanilla pudding over the cake, filling the holes.
  11. Next, add the strawberry pudding and distribute evenly.
  12. Allow the cake to reach room temperature, then refrigerate it for at least 6 hours.
  13. Frost the cake with whipped topping and garnish with sprinkles. Refrigerate for at least 1 hour or until ready to serve.
