Description

Delicious and nutritious coconut protein balls made with wholesome ingredients.


Ingredients

Scale
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup raw sunflower seeds
  • 1/3 cup plant based vanilla protein powder
  • 3 medjool dates, pitted
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 3 Tbsp water

Instructions

  1. Combine all ingredients, except water in a food processor.
  2. Blend, then add the water one tablespoon at a time until the mixture starts to clump and forms a ball in the food processor.
  3. Scoop the dough and roll into balls about 1 tablespoon in size.
  4. Store the leftovers in a sealed container in the fridge for up to two weeks.

Notes

  • Make sure to use soft medjool dates for easier blending.
  • Adjust the amount of water as needed to achieve the right consistency.
